d’Lish GIVEAWAY (closed)

Oh hey there!  Missed ya yesterday because some handsome little man decided to take an hour and a half to get to sleep on Monday evening.  By the time he finally went down, this momma headed to bed herself.  Sleep > blogging.  True story.  Last night was considerably shorter (yay!), which I’m happy about because it means I get to come here and tell you about some tasty food I’ve been eating lately.  So here we go:

Breakfast: Heart-Shaped Pancake in Honor of Valentine’s Day

In the mix for the pancake: Love Grown Foods super oats with quinoa and chia, two eggs, flax seed, cinnamon, milk, and baking powder.  For the topping I microwaved frozen strawberries with a little water, mashed them up, mixed in Mamma Chia seeds, and let it sit to thicken up.  I slathered coconut oil on my pancake, topped it with this strawberry mixture, and then drizzled syrup on top.  It was fantastic.

Lunch: Chicken, Sugar Snap Peas, Orange, and Babybel Cheese

My mom made the chicken and sent me home with a couple.  She makes the best baked breaded chicken.  I steamed a bag of sugar snap peas, and every time I do, I am reminded just how much I love them.  I think they are a very underrated vegetable.  I seriously love them.  I made them in the morning as I was getting my lunch together, and kept eating them.  It was seven o’clock in the morning, and I hadn’t even had breakfast yet!  I literally eat the whole bag in one sitting.  My grandma gave me a few Babybel cheeses, and the white cheddar flavor definitely doesn’t disappoint.

Yes, my family always gives me a lot of food.  I guess they know how much I like to eat. 🙂  Dinner was courtesy of my sister.

Dinner: Barbecue Chicken Sandwiches and Asparagus

There is a little dollar roll underneath all that meat.  I went back for seconds.  Jacob, my nephew, couldn’t believe how much he liked the sandwiches, too.  I feel like everyone loves barbecue chicken sandwiches.

Dessert: Hot Chocolate and Special K Brownies

Peanut Butter Fudge Brownie Ice Cream Sandwich

I have some good meals to share with you all today.  You know the ones; it’s where you look back at your pictures that you obviously took because, hello, it’s 2015, and that’s what we do, and think, “Wow, I’ve got to have that again!”  That’s how I feel about the food I’m showcasing in today’s post.

Breakfast: Homemade Cereal with Strawberries and Milk

I made this yesterday morning, and I was surprised at how good it was.  You literally just combine all the ingredients in a bowl, bake, crumble, and add milk.  I used dairy milk to increase the protein.  I also substituted half of the flaxseed for coconut flour and left out the shredded coconut since I didn’t have any.  I added milk before baking, and it turned out awesome! It’s packed with protein and fiber.  It would also be good topped with syrup and eaten more like a pancake instead of cereal.

Lunch: Chipotle Chicken Bowl 


On Monday, I went to Chipotle as they were running a promotion. If you bought something from the Sofritas menu, you could bring back your receipt to get a free meal.  Well, my Chipotle ran out of Sofritas, so I had to order something else. No big deal, my chicken bowl definitely didn’t disappoint!  I ordered it with black and pinto beans, brown rice, lettuce, cheese, and corn salsa.

I was STARVING when I arrived. We ordered the brie for an appetizers, and I’m pretty sure I had eight loaves of bread. I wanted a very substantial meal and one that I knew would satiate my raging appetite, so I ordered the burger and fries.  Since I had so much bread pre-dinner, I ate my burger sans buns… and all the fries.  I was happily stuffed by the time I left.  The bleu cheese on the burger was incredible! It was fun, as always, to get together with these ladies. We could have chatted for hours on end, about our babies, work, trips, blogging, you name it!  Great group of women!

While I’m still loving the new Special K Snack Bars, the new Special K brownies are equally awesome for a sweet treat!  They come in two flavors, Divine Fudge and Heavenly Caramel, and are made with real cocoa, chocolate or caramel chips, and topped with a drizzle of chocolate fudge.

These Special K brownies not only taste great, but make for a healthy snack to satisfy a sweet tooth without going overboard as they’re just 80 calories per bar.  Thanks to breastfeeding, my meals, snacks, and desserts are larger than life normal, as I require extra calories these days (no complaints there!).  So one night I had the genius idea to open not one, but two Special K brownies, slather peanut butter on one, add a scoop of vanilla ice cream on the other, and drizzle more peanut butter on top.

I love this mug for it’s positive message.  Sometimes we all just need to stop, smile, breathe, and remember that life is beautiful because it really is.

Just like last week, protein shakes have been really appealing in the morning.  They’re fast, easy to make, and loaded with protein which keeps me full longer.

And they’re kind of pretty, too, eh?  This one had raspberries, vanilla protein powder, Silk’s cashew milk, ground flaxseed, wheat germ, and vanilla NuNaturals.  Speaking of Silk’s cashew milk, I finally found it and am very impressed with how creamy it is, which I love.  Perfect for smoothies and shakes!

Snacks lately have been the Special K snack bars which is a great option for a healthy snack. Lunch and dinner the past three days have been the same.  I made a huge pot of pasta over the weekend.  When I like (love) a dish, I don’t mind eating it over and over.  I brought some to my sister’s, so three days straight of this pasta was plenty for me.  But it was delicious and I definitely got my carb fix!

I used whole wheat noodles which actually pack a decent amount of fiber and protein (way more than white pasta anyway!), sauteed mushrooms, added peas, spinach, and beans, and made a sauce using cream cheese, chicken broth, Parmesan cheese, garlic, and some spices.  Not “healthy,” but definitely healthier than a traditional white sauce using cream and butter.
