I was wondering if after all these days you’d like to me to blog
To go over everything
They say that time’s supposed to make ya write
But I ain’t done much writing

Oh, that’s not the Adele version you know? Weird. Holy moly blog hiatus!  I don’t know what happened there!  Actually, I do.  Last week, William and I both were battling a horrible head cold. I had no energy and went to bed shortly after he did every day.  By the time Friday rolled around, we were both wiped.  I put him to sleep, went to bed, woke up at 2:30 in the morning to William throwing up in his crib.  I brought him in my bed; he puked 30 minutes later.  I changed his crib sheets, threw in a load of wash for both of our sheets, and went to sleep in the extra bedroom.  He woke up at 4:30, I brought him in bed, he woke up at 6:30 throwing up on that bed.  Again, at 8:00 in the living room. And one final time at noon in the kitchen.  Gross, laundry, sanitize, sleep.  That was the drill.

William was feeling better Sunday when, naturally, I started feeling funky.  I’ll spare you my details, but I thought my insides were trying to leave my body for a good portion of the day.  Needless to say, I took the day off work on Monday.  Now, we’re both healthy and keeping all our food inside.  Thank goodness.

So HI! What’s been going on?!  Besides sanitizing the heck out of my house and doing a thousand loads of laundry, not a ton has been going on around here!  Here’s a photo to show you that I’m still alive and kickin’…

Stephanie often jokes about how William has no boundaries when it comes to nursing, yet she’s the one who comes in to take a sister selfie WHILE he is nursing!  Talk about no boundaries!  Can you spot his little hand?

We’ve had some crazy nice days of weather which we’ve been sure to get outside as much as possible, especially given the nasty germs inside.

William is talking up a storm these days.  My mom, his Yaya, gets him to talk the most and they converse in full sentences for hours on end.  He babbles and babbles and picks up and understands everything you say. He literally talks in complete sentences now.  It’s quite amazing!

You know how everyone jokes about the “Freshman 15?”  When you go to college and inevitably gain 15 pounds?  Well, the school where I teach looooves to eat. Instead of the Freshman 15, there’s our school’s 20… As delicious as the donuts are in the teacher’s lounge every week, they’re not so great for anyone’s waistline.  This is why I helped to start “Wellness Wednesday,” where we do a 15 minute workout in the morning and share healthy snacks in the lounge.  After National Popcorn Day, I reached out to SkinnyPop and asked if they’d like to sponsor a Wellness Wednesday.

To say teachers were happy about the healthy snack that day would be an understatement!  That SkinnyPop went like wildfire!  Those individual bags are so perfect. I always love SkinnyPop, but sometimes it is hard to demonstrate restraint and portion control when eating out of the big bags. The snack bags are perfectly portioned at 100 calories.  Big thanks to SkinnyPop for being awesome and encouraging healthy snacks!

Robes.  I live in them.  First thing in the morning, I put it on, and it’s the last thing I take off at night.  Right when I come home from school, I undress, put my pajamas on, and then my robe.  I literally live in my robe.  My family constantly questions me as to why I’m always, always in my robe.  “Because it’s so darn comfortable,” I tell them over and over.  Well, for Chanukah, one of William’s gifts he received was a Thomas the Train robe.

Alright, that’s it for today.  Short and sweet, yes.  Let’s just ease back into this blogging thing. That was my longest hiatus in my four plus years of blogging!

Catch me up – what’s been going on?!

National Popcorn Day

Did you know… Today is National Popcorn Day?!  Oh yes, there’s a day for everything.  Not that it’s a bad thing; it’s a fun way to add a little something to our days!  In celebration of National Popcorn Day, SkinnyPop so kindly sent us a huge box with several bags of their original popcorn.  It wasn’t before long that little tiny fingers went reaching in that bag when I was trying to take a simple snapshot!

Then it turned into William shoving as much popcorn in his mouth as humanly possible for a 21 month old.  Of course I monitored as popcorn can be dangerous for little ones.  But I did keep snapping away as he was so darn cute with that big bag of popcorn!


And since it’s the first day of my work week after a long, relaxing weekend (seriously relaxing! I took TWO naps yesterday!), I am keeping things short and sweet today.


As some of you may have seen on Instagram (@itzlinz), I made a surprise delivery to one of my good friend’s houses to share the #TeamSkinnyPop love.  I got a very happy text in return shortly after. 🙂

Have you ever had 24 full size bags of SkinnyPop delivered to your door all at one time?  That happened to be yesterday, and I was beyond excited to see the two massive boxes waiting for me.

Needless to say… I ate SkinnyPop all day long.


Well, I did have some other food, but it was a pretty snacky day.

I started the day (before SkinnyPop arrived) with a healthy Strawberry Smoothie.

It was full of good stuff: 1 cup frozen strawberries, 1 cup milk, 1 tbsp hemp seeds, 1 tbsp flax seeds, 1 tsp maple syrup, 1 scoop A-Game greens. Cold, thick, and delicious.

I hosted a small play date yesterday with my two good friends Diana and Rachel and their babies Emily and Carly.  Many more of these to come, especially this summer!

It’s funny to see the babies interact now.  Emily is still pretty young, but William and Carly LOVE playing with each other.  They are just waiting for Emily to get a liiiittle older as they were definitely interested in her as they tried to poke her eyes and bite her feet.

They came over in the morning, so I set out a nice little brunch for all of us.

Watermelon, blueberry muffins, banana bread, Blue Diamond sea salt almonds, chocolate chip banana bread, and an egg and cheese biscuit casserole.  I had some when the girls were over, when they left, and throughout the day.  This served as my brunch, lunch, and snacks.  I have totally been loving on watermelon lately.  I’m not a huge fan of cutting it, but the few minutes it takes is definitely worth it, especially with the large quantity of fruit it provides. Anyone else loving on watermelon this summer?

They’re at such a fun age where they actually follow the directions (sometimes) of short commands.  And they both copy each other.  Carly put a basket on her head and William thought it was the funniest thing ever. Then, he proceeded to do it multiple times later in the day.  Silly babies.

Can’t stop. Won’t stop.

At least it’s healthy, right? I’m now part of #TeamSkinnyPop, so lots and lots and lots and lots of SkinnyPop will be poppin’ (ha!) up around here. They are most known for “NO ARTIFICIAL ANYTHING” in their popcorn. Most notably, SkinnyPop is cholesterol free, zero trans fat, dairy free, peanut free, tree nut free, gluten free, preservative free, non gmo, and a good source of fiber. The four flavors include: Original, Black Pepper, White Cheddar, and Naturally Sweet. Right now, the white cheddar is stealing my heart (but I can always eat the original!); I do need to get my hands on that naturally sweet flavor. I haven’t tried that yet, and know it would be fantastic.

With all the snacking I did ALL.DAY.LONG. (seriously), I decided it would be a good idea to get some veggies in for dinner.  And that I did.

What is this beautiful creation, you ask. (Oh you didn’t? I’ll tell you anyway.)  I used a Flatout ProteinUP wrap and loaded it up with tomatoes, cucumbers, lentils, hummus, and red peppers.  Then, I topped it all with Parmesan cheese and heated it in the oven for a few minutes before rolling it up.  As I was eating it, I was quite pleased with my creation.  But then I remembered I meant to add avocado to it. Argh, that would have made it even better. Boo. It was good as it was, and kept me full longer than I anticipated. (The ProteinUP wrap has 12 grams of protein in it alone! Not to mention the hummus, lentils, and cheese!)

As I sit here and blog its Tuesday evening.  I’m munching away on SkinnyPop because… well, I can always eat SkinnyPop, hungry or not. Not the best habit to get into, but it’s just SO GOOD. Ok, time to stop, sign off, put away the SkinnyPop, and head to bed.
