New Shoes

The other day Mama Pea posted a recipe titled, “Healthy Monkey Bread.”  I’m not kidding you when I say I thought about it all day long, and drove to Trader Joe’s after school to pick up a package of their whole wheat dough, so I could make a batch.

Best.decision.ever.  The recipe was ridiculously easy to make.  Surprisingly, Jonny had never even heard of monkey bread before!  (What??)  I was happy to introduce him.  Sure, there is still some butter and sugar in this recipe, but this is totally worth the indulgence.  And indulgence is a good thing – in moderation; deprivation is not a good thing – ever.  Rest assured, there was NO deprivation going on here last night…

Itz better than using your tongue, right?  I actually asked Jonny while we were eating one a few of the dough balls, “Couldn’t you just finish the whole pan tonight?”  To which he replied, “Obviously.”  And obviously, we did not finish the whole pan because that would not have been moderation.  Moderation is key.

I had a nice little jog yesterday morning.

I had a hard time getting myself out the door, but convinced myself by saying I only “had” to run three.  My goal was to cover five miles, and once I got going it was no problem.  High-five for Linz!

I’ve been in need of new running shoes.  My last pair I bought were the Mizuno Wave Rider 14′s.  It was probably over a year ago.  Since I hadn’t been running consistently, I went out and bought a pair of Asics (pictured above) to workout in.

Honestly, I bought the Asics because I needed a new pair of workout shoes.  I found them, they were comfortable, I liked the colors, and they were a good price.  However, once I decided to start running a little more seriously, I knew I was in need of a new pair of good running shoes.  I went to the place I always go for new running shoes: Missouri Running Company.  I got a kick out of this little guy in the store:

Mo Run Co. has the best service ever.  The man who helped me looked at my old shoes, watched me walk and run, and listened to what I was looking for and my thoughts on my old shoes.  I loved my Mizuno Wave Rider’s, but I did tell him about my recent knee pain, and knew it could be due to the fact that my shoes were old.  I also have really high arches, so I need pretty supportive shoes.  He suggested the following three pairs: the new Mizuno Wave Rider 15, a pair of Brooks PureFlow, and a pair of Saucony’s (can’t remember which one).

I tested out each pair by running up and down the sidewalk outside the store.  Each pair was extremely light, comfortable, and supportive, but ultimately I decided on the Brooks.

I could feel the most arch support in the Brooks, which I like.  The website states, “With a wider Nav Band coming up the lateral side and grabbing the midsole, the foot receives arch support without the bulkiness of underfoot materials. A center strike pod provides guidance in finding the natural landing zone, and modern air mesh wraps the foot for an incredibly comfortable fit.” (source)  Can’t wait to try them out!

The Last of #HLS12

I can’t believe itz already been a week since the Healthy Living Summit!  I’ve had a lot of fun re-living it through writing my recaps and reading everyone’s fabulous blog posts.  In case you missed any, here they are in a nutshell:

For the last evening in Boston, a group of us went out to dinner at Cafe Sushi.  I wore a new dress, and was so sad it was our last night together!

Afterwards, we finished off the evening with a sweet treat which is my kind of night!

Sunday morning was a casual 5K run/walk with anyone and everyone who was interested.  Optional 5K at the Healthy Living Summit – what do YOU think the turnout was?

It was a lovely run along the river with a magnificent view.

We jogged at a casual pace chatting away happily.  My roomie Chelsea wasn’t sure about running it, but I convinced her to at least run the first mile with me, then we could always walk.  Well, she made it the whole way and for that she gets this week’s high-five!

High Five Friday with A Dash of Meg

I think there were several factors which made this run enjoyable.  The nice view along the river, the temperature was cool, and the chatter was strong which took the focus off running. 

You rocked it, Chels!  And taking a brief break while paused at a stoplight is the perfect photo opp!  I only wish I had this kind of running group back home all the time!

Itz o-FISH-al

I’ve spent this past week preparing my classroom for the upcoming school year (and, as always, planning and making time for my workouts!).  As many of you know, this summer I taught a healthy living class for summer school.  During that time, I taught them about healthy eating, yoga, and getting active.  The students seemed to truly enjoy it, and I loved teaching them about the topics I’m so passionate about.

While this school year will be jam-packed with curriculum (3rd grade is a BIG year!), I still hope to be able to incorporate many little lessons regarding healthy living.  Last year, we were fortunate enough to receive exercise balls for all of our students to replace the chairs.  This year, we will continue to use them.  Here’s a glimpse into my classroom before Meet The Teacher last night.

Parents and children alike were ecstatic to see the green balls.  Some parents are very curious as to if the balls really “work,” or if they’re more distracting.  During the few months we used them, they were incredible effective.  It is crucial to set the ground rules during the first few days of school to ensure the students’ safety.  Some of my rules I implement:

  • Bottoms on the balls, both feet on the floor
  • Small bounces (again: bottoms on the balls)
  • Balls stay on the floor (no throwing)
  • Bottoms, hands, desks, and floor are the only things that touch the balls (no pencils, scissors, markers, etc.)

If a child has trouble abiding by these rules, then they simply get a stool or chair for the remainder of the day.  The following day, they have the option to try a ball again.  We also discuss the importance of respecting property and maintaining safety (all of the rules stem from respect and safety which we talk about a lot).  Last year, I think I only had a couple of instances where kids needed to put their ball away for the day.  It works and is an easy way for kids to develop their their core strength, and work on their stability and balance throughout the day.

(Note: Kids don’t spend an extraordinary time at their desks.  Large group lessons are taught on the carpet, and independent work is completed in a variety of places including the floor, their desk, or a larger table.)

I’ve used the fish theme every year I’ve taught.  I love it, and each year I add new things whenever a fresh idea presents itself.  Thanks to Pinterest, I’ve had several new ideas this year.  The students completed a short scavenger hunt in the room last night, and when they finished, they brought me their paper for a “3rd grade only!” treat.

Fruit snacks certainly are not a nutritional superstar (or nutritional whatsoever), but every so often a sweet treat is just fine.  (Plus, how perfect is Nemo for my classroom?  And I use goldfish during my Open House with a “Your child is quite a catch!” note attached, so I didn’t want to overuse the goldfish idea.)

Switching gears, let’s talk High Five Friday with A Dash of Meg.

This week’s high five goes to my younger brother, Justin.  Justin recently accepted a new job in Phoenix, Arizona.  While I’m sad he’ll be leaving San Diego (it was SUCH a fun place to visit!), I know he’ll totally rock his new job (like everything else he does in his life).  Plus, Arizona is not too shabby, and makes for a great vacation spot.  And Jonny’s brother lives there, so we’ll get to visit both of our brothers at the same time!

I’m off to finish up my classroom, then enjoy my last weekend before school o-FISH-ally begins on Tuesday.

Handstand Fun

I’m not sure if it was the handstands in CrossFit or the handstand excitement of getting new FitGear, but I sure have had handstand fever this past week!  Last night we went to dinner at our friends’ house (DiAndy).  After dinner, the boys went to watch tv while the girls and I tried to conduct our own photoshoot.  We started with trying to take our own self-portrait.

While we all agreed that this was not an awesome picture, we decided to do something more fun.  What could we do?  I had the grand idea of showing off our strength and do handstands against the wall.  We even got Brandon to join the fun.

Diana’s not pictured because she is still working on her upper body strength. ;) We tried to have Jessica hold her up… Then Jessica and Brandon tried… Then, when that didn’t work, she took matters in her own hands (errrr… on her head)…

Whatever works!  She got up and stayed!  (Nevermind the fact she used the dog bed that was over ten years old and quite possibly has never been washed.)  Next, we decided to get really fancy with our handstands.  We made several attempts for all the girls to do handstands (or headstands) against the wall simultaneously.

When that didn’t work, we took the action to the basement where we had more room and carpet.  Jessica and I devised a plan where we would both do handstands up against each other.  Brandon would facilitate the process matching our legs and feet together and then step out of the way for the actual photo to be shot.  Seriously, what were we thinking?  Who did we think we were?  And how old are we?

Clearly, it didn’t work, but we sure had fun and no one got hurt (a couple of bruises and popping elbows don’t count).  We’ll continue to work on our fitness and balance for our next photoshoot dinner party.

I think we all get high-fives for doing/attempting headstands on a Thurday night! ;) Speaking of high-fives, let’s talk some High Five Friday with the Megster!

I’m giving myself a high-five for continuing RW Run Streak! That’s right – I’m still doing it!  This means I’ve run a mile or more each day since Memorial Day!  I’m not sure how long it’ll last, but I figure I’ll go for as long as I can.  Itz a fun streak!

Friday Facts

1.  Sometimes, when I go to bed after Jonny and Zoey, I find that my spot is taken.

But I’m ok with it (especially when I get a picture) because itz so darn cute.

2.  For those of you that follow me on Instagram (follow me at ItzLinz), you probably saw my beautiful looking pancake yesterday morning.  More often than not, my pancakes have difficulty flipping (itz the pancake’s fault, not mine – obviously), so when they turn out, I get happy.  And yesterday’s was especially pretty!

I topped it with fresh strawberries and Artisana coconut butter.  My pancake yesterday was an easy recipe of 2 eggs, 1/3 cup oats, dash of milk, 1 tsp ground flaxseeds, and 1/2 tsp baking powder.

3.  I’ve been obsessed with coffee recently.  Usually, I’m not a huge coffee drinker, but I do enjoy a cup here and there.  Coffee tends to be more of a vacation thing for me; not sure why.  I don’t need coffee or caffeine in the morning to get going.  However, lately itz been more about the creamer than it has about the coffee.

We first discovered Natural Bliss Sweet Cream when Jonny and I vacationed in Arizona earlier this year.  Robbie and Becca had a huge jug of this in their fridge that Jonny and I went through embarrassingly fast.  We bought them another, but I’m pretty sure we went through that, too.  Obviously, adding cream and sugar to coffee is not a nutritional star, but like I always preach: everything in moderation is fine.  Although there hasn’t been much moderation with the creamer over here, so I should probably stop buying it.

Actually, I intended on just buying it once – as a treat.  So I bought a huge jug (not pictured).  But then my sister tried it at our house and was hooked!  (Surprise surprise, copy cat again. ;) )  Well, she couldn’t find the creamer at her normal grocery store, so being the kind sister I am, I picked one up for her.  Well, I forgot to bring it to her.  Again, and again, and again.  Then, we ran out of ours, so I opened hers.  #coffeeaddict  #coffeecreameraddict

4.  I recently bought these awesome green Birkenstocks on Rue La La.

My mother-in-law got me hooked on Birkstenstocks, and now itz the only sandal I’ll wear.  They are perfect for my high arches, and stylish, too.  The green ones make my third pair.  And when I find them for half the price, well, itz no question there.

5.  I’m working out with my brother Jason this morning.  He asked me to kick his butt for a legs workout, so we’ll be doing this one.

We both can expect major DOMS.  Itz a killer every time!

6.  Speaking of Jason, he gets a High Five for today.

Jason was recently asked to be the VP of Sales for Push Global Proximity Marketing - bringing new bluetooth and smartphone marketing to local businesses.  This is quite the honor and a job that he will definitely succeed at (as always).  Well-deserving of a high-five!

My mom also gets a high-five for having hand surgery yesterday.  She is recovering like the strong woman she always is and I aspire to be.

I chose to use a picture of me and my mom from Barbie’s wedding instead of the picture my dad sent of my mom in the hospital bed (though that was pretty, too!).  You’re welcome, Momma!  We’ll give my mom a figurative high-five instead of a literal high-five, since… well… her hand and all… ;-)   #dumbjoke

Tell me a Friday Fact about yourself!

High Five Friday

Happy Friday!  Today is a jam packed day for me and my beautiful best friend as she is getting married TOMORROW!  (More on that later.)  Let’s cut right to it and get started with High Five Friday with Meg!

Nancy (my mother-in-law):  Nancy came to my summer school class on Wednesday to do an exercise dance class.  (She is a certified personal trainer and group exercise teacher.)  We jammed out to quite a few songs included the Cha Cha Slide, Macho Man, Electric Side, and Walk Like An Egyptian!  The kids had an absolute blast and were surprised at how tiring dancing can be!  We all loved it.  Thank you, Nancy!

Stephanie (my seester):  Stephanie was the featured photographer at lilian.grace this week.  Check out her interview and some of her amazing pictures here.

Roxie: Many of you have been following Roxie’s story, and supporting her along the way.  Well, I’ve got fabulous news: Roxie went home!!!  After 3 weeks in isolation during treatment, her counts are in and the doctors cleared her to go home.  This is unbelievable and just another example of how Roxie is a true fighter.  Learn more about Roxie here and stay up to date by following Team Roxie on Facebook.

Me:  While it’s hard to give myself any credit compared to what Roxie has been through and accomplished, I will say I’m happy with my #RWRunStreak this week.  Before, I had been getting in the minimum: one mile.  This past week, I got outside in the morning (instead of on the treadmill in the basement or at the gym), and ran two miles most mornings.

  • Monday: 2 miles
  • Tuesday: 3 miles
  • Wednesday: 2 miles
  • Thursday: 2 miles
  • Friday: TBD

Ok, two miles is not groundbreaking, but I’m happy I maintained it throughout the week at 5:30 am!  And it is double than what I had been doing so…. I’m proud. :)   Plus, I’m running around like crazy with my kiddos during summer school, just not counting that distance.  On Wednesday I actually brought my Garmin Forerunner and saw that I ran a mile with both classes!  Extra 2 miles for the day!  Friday (today) is TBD because I am pre-writing this post since I joined the other bridesmaids for a sleepover with our fabulous bride last night.  This morning, I’ll sneak out for a light jog before the festivities begin.   I will keep the streak alive!

Healthy Banana Bread for the Win

You know how I jokingly referred to myself as a “grill master” after I prepared vegetables on the grill for the first time a few days ago?  Well, I decided to get ambitious… a little too ambitious.  I bought some lean ground turkey meat the other day and attempted to make them into turkey burgers.  But of course I didn’t just form them into patties.  I tried to get creative and make a new recipe even though I have never made turkey burgers before in my life.  I mixed the turkey meat with some red onion, a jalapeno, white beans, corn, oats, garlic, cayenne pepper, and some other spices.  It looked really good and smelled really good.

Upon the first flip, half of them started to crumble.  I salvaged the crumbled pieces and cooked them on the stove top (where I am much more comfortable!).  There were four burgers that survived and we ate them for our dinner along with brussel sprouts that I did [successfully] cook on the grill with a little olive oil, sea salt, and pepper.

When we finished eating, Jonny asked me what I thought of the burgers.  “They were fine,” I replied.  “What did you think?”  I questioned back.  “They were fine.”  Needless to say, I have some work to do on the grill.

Even though last night’s dinner didn’t turn out quite as I had planned, I am still proud of trying and taking the first steps to become a little more proficient with the grill.  Gotta start somewhere.  It is important to recognize our accomplishments, and for that I’ll give myself a high-five for this week’s High Five Friday with Meg.

I did have some success with a new recipe last night.  We had several overly ripe bananas that were in dire need of being used.  Banana bread sounded good, so after reading many different recipes, I got started on making my own healthier version.  Jonny and I were both impressed with the results.  Linz: 1.  Grill: 1.  We’re even.

Banana Bread

Ingredients:

  • 4 ripe bananas
  • 2 cups whole wheat flour
  • 1 cup old-fashioned oats
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup NuNaturals More Fiber Baking Blend
  • 1/2 cup ground flaxseeds
  • 1/2 cup unsweetened applesauce
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons Artisana coconut butter
  • 1 tablespoon cinnamon
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt

Directions:

  • Mix all ingredients together in large bowl.
  • Pour in sprayed 9 x 13 pan.
  • Bake at 350 for 35-40 minutes.

Most recipes suggest mixing particular ingredients together in separate bowls.  Not me.  I mixed everything together all at once, and it still turned out.  It looks like a lot of ingredients, but you probably have most items on hand.  The banana bread was thick and flavorful and delicious.  It is not overly sweet, but it is incredibly moist and soft.  Itz perfect.  There was actually no detectable coconut taste, for better or for worse, so for people who aren’t coconut fans, you could easily omit.

I had one lone banana left so I decided to really kick up the dessert factor.  I sliced the banana and cooked it on the stove (clearly not the grill!) with a little coconut butter and a pinch of brown sugar.

Oh baby!  The banana bread just got even better!  The warm bananas reminded me of bananas foster – a treat my dad used to make when we were little.  I’m already planning how many ways I’m going to eat this banana bread.  Like, for breakfast, lunch, dinner, dessert, and snack.  Overkill?  I think not.  Linz: 2.  Grill: 1.  Boo-yah!

BYOF To The Ballgame

We brought home a winner last night at the Cardinals game!  Jonny and I have a good streak going with the Redbirds.  Hopefully we can keep it that way!  Whenever we go to evening games, we prefer to bring our own food.  As tasty as ballpark food is, let’s be real: itz not at all healthy.  In fact, itz downright terrible for you.  I’m all about indulging when I feel like it’s worth it, and ballpark food is not.

Where to start?  Well, one must always have some type of appetizer or snack.  The perfect ballpark snack is, of course, peanuts!  Bring them from home and you can spend two bucks on a bag from the grocery store versus six dollars at the game.

Peanuts have protein and fat to keep you full.  Plus, you have to work to get them out of the shell, so you can’t just shove them in your mouth and overeat.  Win-win.

We attended the baseball game with Jonny’s parents, so I got all of our orders and picked up dinner from Crazy Bowls and Wraps - a St. Louis place that does healthy food fast.  When distributing the food at the game, I noticed we were short a wrap.  Silly me didn’t bother to check our order before leaving, and CBW didn’t put one in there that I had paid for!  So frustrating, but Nancy ended up being quite happy with her barbecue pulled pork sandwich.

You can see Jack’s hand and wrap in the background, but he ate it before I could snap a real picture.  (Probably the only picture of the night I missed!)  Even though Jonny eats rocket fast, I was able to capture one of him with his Mediterranean Chicken Wrap with falafel, hummus, lettuce, feta, and tzatziki sauce in a whole wheat tortilla.

Jonny with food = Happy Jonny.  I rolled with the Tostada Salad with grilled chicken breast, romaine-organic spring mix, garbanzo beans, pico de gallo, feta cheese, avocado, and pepperocinis with a jalapeno-cilantro vinaigrette on the side.

My knees worked just fine as a table, thankyouverymuch!  See?  You can eat healthy at ballgames!  We are very fortunate that Busch Stadium allows fans to bring in any food or drink as long as it’s not in a glass container.  Oh, we also brought many bottles of water to stay hydrated in the warm weather!  And I got a little crafty with the camera:

Jaimi just passed the 100 pound mark in her weight loss journey!  It’s absolutely incredible and I am so proud of all the changes she has made to live a more healthy lifestyle.  Jaimi writes, “I just want everyone to know losing weight is possible with a little work and a made up mind! If I can do it, anyone can do it! I honestly believe that I was almost a food addict whenever I was depressed in the fall! Now, I am a recovering one :) Yes, things tempt me and sometimes I will take a small bite of something but I am never going back to the old lifestyle!”  Amen, Jaimi!  Moderation is key and anything you put your mind to is possible!  #PROOF  Keep it up, girl!

Cookie Brownie Cheesecake

Cookie Brownie Cheesecake all rolled into one.  Sound ridiculous?  It is.  But I made it and it was oh so tasty.  When I told my dad, he was like, “Uuuuhhhh that totally goes against everything you’re about with all this healthy living stuff.”  No, no.  Itz all about balance.  I don’t deprive myself.  I fuel my body with healthy foods because it makes me feel my best.  However, I do still thoroughly enjoy sweet treats, just in moderation and not a ton everyday.  So now I present to you: Cookie Brownie Cheesecake!

The idea came to my when I saw a couple different recipes for layered desserts.  I wanted something relatively easy to make (aka: from a box).  After browsing Pinterest, blogs, and tons of recipes, I found Thanksgiving Cookie Cake Pie on PB Fingers.  I knew I wanted to modify it a bit because, well… it’s nowhere near Thanksgiving and I wasn’t really feeling the pumpkin flavor.  (However, this would be a killer dessert to make in the Fall!)  My creation had 3 layers: Cookie, Brownie, Cheesecake.

Cookie:  The first layer was Cinnamon Oatmeal Cookie Dough which I followed Julie’s recipe exactly (yellow cake mix, oats, and some other stuff).  If I make this again, I wouldn’t add cinnamon unless I was using pumpkin flavors.  I would have preferred just a plain oatmeal cookie taste.

Brownie:  The second layer was brownie, but not just any brownie.  I used Betty Crocker’s Turtle Brownie Mix and it was a fabulous addition, especially the caramel that was drizzled on top!  I prepared the brownie mix as directed on the box.

Cheesecake:  The top layer included 8 ounces of cream cheese, 1 egg, 1/3 cup sugar, and 1/2 teaspoon of vanilla extract.  I mixed it all together and then poured it on top.  It covered the entire pan, but then when I baked it, the brownie and cookie crust rose up and overtook the cheesecake.

The cookie-brownie crust ended up being awesome, so it all worked out!  The dessert was definitely a hit and so tasty!  I won’t make it often, but I sure did enjoy it while it lasted.  All three desserts rolled into one.  Oh baby.

The caramel was gooey, the cookie was chewy, and the thin layer of cheesecake was perfect.  Looking back on the recipe, I only used Julie’s recipe for the cookie crust.  I baked it at 325 for a little more than an hour.
