It’s time to *POP* into a healthy, new year! Read more to find out how this Detox Popcorn Recipe will fit into your life in more ways than just a healthy snack!

I’m guessing many of your New Year’s resolutions, like my own, include something along the lines of making healthier choices.  Maybe they’re related to nourishing your body, moving more, or being mindful.  Whatever it may be, I’ve got something to foster your healthier intentions.

For the record, when I speak of being “healthy,” I like to refer to one’s whole self.  There’s not just one aspect that makes a person healthy (ie: diet).  Being truly healthy is being able to balance all aspects of one’s life.  Yes, it’s important to fuel your body with wholesome foods.  Yes, it’s important to be active.  Yes, it’s important to get enough sleep.  Yes, it’s important to manage stress.  Yes, it’s important to check in with yourself and give yourself what you need. It’s a balancing act and something that everyone can always improve upon.

Each day is a fresh start with new opportunities.  Wake up and remind yourself of that.  You’ve got to believe it in order for it to happen.  I talk to my fourth graders about having a growth mindset, and as adults, it’s much harder to make that shift.   Simple mantras can really pay off and change the way you think.  Reflect on the past in order to grow.  Don’t dwell on what has already happened; learn from it.  What went well?  What didn’t?  Move forward with positive intentions.  What will you do differently next time?  The more positive you are, the happier you’ll be.  Negative people generally are not happy people.  Be the best version of yourself.  Plain and simple.

So how in the world does Detox Popcorn fit into this post?  Well friends, let me tell you how.  This detox popcorn recipe doesn’t only deliver as a healthy snack, but it offers a physical cleansing, as well as a mental cleansing.  Before we get into those details, let’s first discuss popcorn as what you eat as a snack.

Popcorn is a seed which was discovered in the Americas thousands of years ago where it has captivated people for centuries with its mythical, magical charm.  Popcorn is a year round snack, but National Popcorn Day is January 19th.  Here are a few corny facts:

  • Popcorn is a healthy, whole grain snack food. Popcorn is a whole grain, which makes it a good carbohydrate choice.  Whole grains contain fiber, providing the roughage needed in a daily diet. Popcorn has no artificial additives or preservatives and is sugar- free.
  • Popcorn is non-GMO.  There has never been, nor is there currently, any Genetically Modified Organism (GMO) popcorn or popcorn seed for sale.
  • Diacetyl was removed from microwave popcorn in 2006, and since then most companies have removed PFOAs from their packaging.
  • Popcorn is gluten-free. Popcorn does not contain wheat, rye, or barley gluten – the types of gluten most associated with gluten disorders.

Lemon essential oil has a multitude of uses and benefits.  It’s known for its purifying properties.  You can diffuse it, ingest it, or use it topically.  (You do want to make sure you are using a high quality essential oil.  There are many brands out there, but dOTERRA is a trusted brand – I used to be a consultant, just not anymore – and their oils are certified pure therapeutic grade.)  Lemon essential oil can aid in digestion and support healthy respiratory function.  Specifically, it supports your liver which promotes detox.

So how can you infuse your popcorn with lemon oil?  Simply melt coconut oil and stir in several drops of lemon oil!  Coconut oil has several health benefits that support detox, too!  Coconut oil is mostly composed of medium-chain fatty acids which go straight to the liver.  These fatty acids play a critical role in cleansing the body from toxins. Coconut oil helps to flush your body of toxins.

The last ingredient of Detox Popcorn is black pepper.  You have two options here: black pepper essential oil or real black pepper; you’ll reap the benefits with either.  Black pepper oil is high in monoterpenes and sesquiterpenes which are known for their antioxidant activity.  Black pepper is good for the stomach and helps facilitate digestion, important in detox!

While the physical cleansing of detox popcorn has been explained, now let’s discuss the mental cleansing.  As aforementioned, having a positive mindset and reciting mantras can have a grand effect.  The affirmation to foster your mental cleanse to accompany the detox popcorn is as follows:

Repeat as often as you’d like allowing yourself to fully believe the words and acting upon it to support a detox, both physically and mentally.

Detox Popcorn Recipe 

  • Melt coconut oil.  Stir in 5 drops of lemon oil per tablespoon of coconut oil.  Stir in 1 drop of black pepper oil per tablespoon of coconut oil OR grind black pepper throughout popcorn.  Drizzle coconut oil on top of popcorn.

This recipe is not set in stone.  For a stronger taste, use additional lemon oil or pepper.  For a milder taste, use less.  Simple as that, just as life should be at times.

Dinner: cheese tortellini with peas and Parmesan cheese

The tortellini came from Trader Joe’s and I feel like peas and parm compliment tortellini so well.  There were about fifty-five bowls of this eaten last night. 😉

And now for that recipe….

The Superbowl may have passed, but our love for dips certainly has not!  This cheesy buffalo bean dip recipe is sure to please – itz packed with protein, flavor, and spice!

Cheesy Buffalo Bean Dip Recipe

Ingredients:

  • 1/2 package (4 oz.) cream cheese
  • 1/2 cup buffalo sauce
  • 1 tablespoon chili powder
  • 1 can (16 oz) refried beans
  • 1 cup plain Greek yogurt
  • 1 cup salsa
  • 2 cups shredded Mexican cheese mix

Directions:

  1. Combine all ingredients in small pot.
  2. Cover and cook on low heat for 1 hour, stirring occasionally.
  3. Remove from heat, pour in serving dish, garnish with additional chili powder.
  4. Serve hot and enjoy!

Itz so easy to make!  (Those are always the best recipes.)  And it can be considered lightened up.  I used light cream cheese and Mexican cheese.  (I would not recommend nonfat cream cheese or Mexican cheese.) I used nonfat plain Chobani Greek yogurt, and I suppose low fat or full fat would work just fine, too.  Use more or less chili powder and buffalo sauce depending on your preference of spice.

You guys.  We had a snow day here in St. Louis yesterday again.  Not cool.  I’m so over the snow.  Yes, usually I’m over the moon happy about snow days, but this was our sixth snow day (not consecutive) for the school year.  That means we have to make them up.  If it were just at the end of the school year I wouldn’t mind (this year anyway) since I’ll be on maternity leave with Baby Itz.  However, itz not.  We’re saying good-bye to President’s Day and/or possibly a professional development day.  Come on, warm weather, where ya at?

Since I was home all day yesterday for the fourth day in a row (thanks to the weekend, MLK day, and aforementioned snow day), I wanted to focus on eating balanced meals.  I knew I’d have the time to prepare them, so I figured there weren’t many excuses.  Usually when I’m home all day, I’m a huge grazer and rarely put together actual meals.  However, I did a better (not perfect) job yesterday.

Breakfast:

One whole egg with two egg whites cooked in coconut oil, topped with plain Greek yogurt, nutritional yeast, and red pepper flakes.  Steamed spinach on the side.  I LOVE this combination and could probably eat it everyday.

Mind you, I didn’t take a picture of everything I ate yesterday.  Not even close.  I still did plenty of grazing, but let’s blame that on my pregnancy, mmmk? 😉

Lunch:

I actually made this salad the past two days and felt really good about all the veggies it included!  The base was spinach and kale, and the extras were beets, cucumbers, grape tomatoes, sunflower seeds, cottage cheese, a sprinkle of Parmesan cheese, and a drizzle of balsamic.  I love love love everything about it.

Note: this is not the only thing I ate for lunch; however, itz the only thing I plated around lunchtime.  This salad alone would not normally satiate my hunger for very long because of the lack of protein (small amount of cottage cheese).  Be assured, there were plenty of snacks eaten in addition.  Just wanted to throw that out there…

Snack:

aka BEST SNACK EVER!  Now this is a balanced snack, eh?  Cashews (a very underrated nut, in my opinion), an apple, and a couple squares of Theo’s dark chocolate.  Clearly I’m joking about it being balanced, but it is kind of balanced.  Itz always best to pair fruit with nuts, so you get the healthy balance of carbs, fat, and protein for longer staying power.  And the chocolate?  Well, that’s just a bonus!  And itz dark… so it must be healthy!

Dinner:

I write all the time how Jonny and I eat with his parents and my parents on an almost weekly basis.  Both of our parents almost always send us with leftovers which is very much appreciated.  This week, we ate at Jonny’s parents’ on Sunday, and my parents’ last night.  The dinners are also usually pretty balanced.  The dinner I have pictured is a bit heavier and more carb heavy than usual, but ehhh it sure was tasty!  It was a burger, scalloped potatoes, Brussels sprouts with bacon sauteed in olive oil, and fettuccine.  Heavy, but darn delicious once in awhile!  Just being real here!

Dessert / Another Snack:

Freshly cut pineapple!  Pineapple is Jonny’s most favorite fruit, so when I spotted it at the store for just a dollar, I was quick to drop one in my cart.  Pineapples can be a bit of a pain to cut, but using my Kyocera ceramic knife makes it way easier.  That bad boy cuts through anything!

Tomato Kick Bean Dip Recipe

Juice is good.  Juice is great.  I want to take juice on a date.  Uhhh what?  Ok fine maybe rhyming poems are not my forte, but you know what is?  Super duper easy peasy recipes that include minimal ingredients, are healthy, and taste delicious!  So that is exactly what I have for you today, my friends!  Itz a Tomato Kick Bean Dip recipe.

In working with Glam Media, I was selected to participate in a recipe creation contest with Naked Juice.  Naked Juice is known for their juices, smoothies, and coconut water, but most recently they came out with two brand new flavors in their Power Garden juice line – itz Tomato Kick and Berry Garden.

Naked JuiceIn both of the Power Garden juices, there is a POUND of veggies in every bottle.  Itz an incredibly easy way to get your nutrients on a daily basis.  The website is a lot of fun, too, because it tells you exactly what goes inside each bottle.  For example, in the Tomato Kick bottle there are 2.5 tomatoes, 1/4 red bell pepper, 3/4 celery stalk, 1/5 carrot, 1/2 orange, and a hint of lemon.  So they are literally telling you how to recreate their juices!  Pretty cool, eh?  Itz much easier just to buy a bottle though – heh heh.  Anyway, without further ado, I introduce you to… Tomato Kick Bean Dip!

Itz easy like I promised.  Itz healthy like I promised.  And itz delicious like I promised!

Tomato Kick Bean Dip Recipe

Ingredients:

  • 1 can Great Northern Beans (or any white bean)
  • 1/2 jalapeno pepper, diced
  • 1/4 cup fresh cilantro
  • 1/4 cup Naked Tomato Kick Juice
  • juice of half a lime

Directions:

  • Place all ingredients in a food processor in the order they are listed.  Pulse until desired consistency is reached.  Serve chilled or at room temperature.

Itz perfect with any and all vegetables, pita crisps, or tortilla chips.  And five ingredients that all get thrown in a food processor, how much easier can you get?  Plus, itz nutrient-dense!

Healthy Weekend

Itz been a healthy weekend over here, my friends; how about for you?  I think that the term “healthy” refers to so much more than merely exercising and eating right.  While those factors are definitely incredibly important to living a healthy life, being “healthy” also involves taking care of yourself, both mentally and physically, and fostering relationships with those you choose to surround yourself with.

All of such which are, of course, marvelous, which is why we’re starting the week off celebrating Healthy Diva’s Marvelous in my Monday! #MIMM

Healthy is… spending time with your family.  On Friday night, we went out to dinner at The Pasta House to celebrate my nephew Jackson’s fifth birthday!

Of course Jacob had to help hold the cake and blow out his candles.  Those two boys do everything together!  Best of cousins, best of friends.

Healthy is… nourishing your body with healthy food and fueling it when itz hungry.

On Saturday night, our good friends Stevie and Whitney invited us over for dinner.  They grilled flank steak, asparagus, and potatoes.  Very delicious!

Healthy is… moving your body.  Exercise IS important!  Don’t forget to enjoy the beauty nature offers when the weather permits, too.

Diana and I headed out Sunday morning for a five-mile walk around her neighborhood.  While it was a simple walk, we got in our workout for the day, kept a brisk pace, and took in the views along the way.

Healthy is… doing things you love with people you love.  Jonny, his parents, and I went to the Cardinals game on Sunday afternoon.

My Running Skirts red and white headband and my Oakley sunglasses match perfectly with the rest of our Cardinal red!  While we didn’t exactly bring home a winner, we certainly loved the hot weather and sunshine on our faces!

Healthy is… rooting for the best baseball team ever – the St. Louis Cardinals!

St. Louis IS Cardinal Nation!  The atmosphere is always a blast at Busch Stadium as St. Louis fans are constantly pumped up and cheering on our team.  I love how you can see the Arch in Busch Stadium; it makes for a very pretty backdrop.  Now how many cities can say that about their stadium?  That’s what I thought.  Go Birds!

  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Directions:

  • Mix all ingredients together.
  • Serve with belVita Breakfast Biscuits.

Either way, itz marvelous!  I first enjoyed it with the Golden Oat biscuits, but the Apple Cinnamon paired nicely, too.  Tina made a brilliant recipe of Lightened Up Protein Chocolate Cookie Crumble Ice Cream made with the Chocolate biscuits which looks awesome.  Jonny made a sandwich with the dip and wanted to stick it in the freezer to make an ice cream sandwich, but it didn’t last long enough for that…
