A few weeks ago, my team at school began a new tradition.  We each take turns cooking lunch one day a week.  It adds a little fun something to the week, and you’re only responsible for preparing lunch for the team once every couple months.  We hope to continue this next year!  Yesterday, Katie brought in panini presses, bread, and all the fixings for us to build our own panini. What a fun idea!  I made a panini with turkey, cheese, tomato, spinach, and avocado.  Watermelon and chips on the side.  I’m actually usually more of a cold sandwich kind of gal, but I was really impressed by the panini.  Now I see what all the hype is about paninis and warm sandwiches!

Ok, so I actually made this for breakfast over the weekend, but had so much left that I’ve been eating it for dinner, too.  No complaints there, it’s awesome.  I want to tweak the recipe before sharing it with you, but basically it’s biscuits, eggs, ground chicken, spinach, and cheese.  And it’s seriously fantastic.

Oooooh my goodness, Blue Diamond has done it once again.  They have the absolute best flavors. They recently sent me a package of dark chocolate roasted almonds and sea salt roasted almonds.  They’re both great, but these dark chocolate almonds are THE BEST!  They make the perfect after-dinner snack as they’re sweet, but filling.  They are made with real cocoa and loaded with rich chocolate flavor, blended with just the right amount of sugar and naturally no-calorie stevia extract.

And sometimes it’s fun to play with the almonds when taking pictures.  Each serving contains five grams of protein and three grams of fiber. Oh hey there!  Missed ya yesterday because some handsome little man decided to take an hour and a half to get to sleep on Monday evening.  By the time he finally went down, this momma headed to bed herself.  Sleep > blogging.  True story.  Last night was considerably shorter (yay!), which I’m happy about because it means I get to come here and tell you about some tasty food I’ve been eating lately.  So here we go:

Breakfast: Heart-Shaped Pancake in Honor of Valentine’s Day

In the mix for the pancake: Love Grown Foods super oats with quinoa and chia, two eggs, flax seed, cinnamon, milk, and baking powder.  For the topping I microwaved frozen strawberries with a little water, mashed them up, mixed in Mamma Chia seeds, and let it sit to thicken up.  I slathered coconut oil on my pancake, topped it with this strawberry mixture, and then drizzled syrup on top.  It was fantastic.

Lunch: Chicken, Sugar Snap Peas, Orange, and Babybel Cheese

My mom made the chicken and sent me home with a couple.  She makes the best baked breaded chicken.  I steamed a bag of sugar snap peas, and every time I do, I am reminded just how much I love them.  I think they are a very underrated vegetable.  I seriously love them.  I made them in the morning as I was getting my lunch together, and kept eating them.  It was seven o’clock in the morning, and I hadn’t even had breakfast yet!  I literally eat the whole bag in one sitting.  My grandma gave me a few Babybel cheeses, and the white cheddar flavor definitely doesn’t disappoint.

Yes, my family always gives me a lot of food.  I guess they know how much I like to eat. 🙂  Dinner was courtesy of my sister.

Dinner: Barbecue Chicken Sandwiches and Asparagus

There is a little dollar roll underneath all that meat.  I went back for seconds.  Jacob, my nephew, couldn’t believe how much he liked the sandwiches, too.  I feel like everyone loves barbecue chicken sandwiches.

Dessert: Hot Chocolate and Special K Brownies

You all are the best, you know that? I really appreciate all the advice on my post from yesterday on what I still need to do before Baby Itz’s appearance. Let’s just say that things are getting very real very quickly and lil man will probably be here before his expected due date. I’ve been crazy busy and will continue to be until he comes with all of the preparation that still needs to be done. Deep breaths… Deep breaths…

Food lately has been…. undocumented (unlike my pregnancy – ha!).  I’ve eaten lots of good food recently, too; I just haven’t been snapping the camera. Last Friday, Jonny and I went out to a terrific little Jamaican restaurant with Jonny’s parents. Saturday night included barbecue at my parents. Sunday was my baby shower and Sunday night was a delicious dinner out with my family.  And this week? Well, itz been whatever is fast and easy.

Breakfast: Oatmeal with bananas, cinnamon, and peanut butter.


Itz comforting, easy, delicious, filling, need I say more? And itz a recycled photo, but it all looks the same anyway!

My snacks at school yesterday morning included an orange and popcorn. Random.

Fiber Love Bars recently came out with two brand new flavors: Coconut Macaroon & Apple Crisp and sent me a couple of each to try. Yesterday while I was hooked up to the baby monitor, I was feeling a little snacky, so I opened the coconut macaroon bar.


LOVE! I love love love coconut flavor anyway, and this bar was the bombdotcom, like seriously. (All is good with Baby Itz, by the way!) It reminded me of the inside (the good part) of an almond joy. It was super moist, and honestly just so good. I haven’t tried the apple crisp, but if itz as moist as the coconut macaroon, then itz gotta be great!

Dinner was brinner last night. I made eggs for Jonny and I had a bowl of cereal. I wasn’t super hungry since after my doctor appointment I went all snack-monster at my parents’ house. When hunger rolled in later in the evening, I had a bowl of frosted mini wheats. Can’t really ever go wrong with cereal, eh?


Yes, I use a lot of milk. And yes, I even let my cereal sit a bit so it gets soggy. I like it.

Lots of snacks were eaten before and after, which is why lunch was on the smaller side.  But it sure is pretty, isn’t it? Colorful meals are the best! (And the healthiest!)

Dinner: cheese tortellini with peas and Parmesan cheese

The tortellini came from Trader Joe’s and I feel like peas and parm compliment tortellini so well.  There were about fifty-five bowls of this eaten last night. 😉

And now for that recipe….

The Superbowl may have passed, but our love for dips certainly has not!  This cheesy buffalo bean dip recipe is sure to please – itz packed with protein, flavor, and spice!

Cheesy Buffalo Bean Dip Recipe

  • 1/2 package (4 oz.) cream cheese
  • 1/2 cup buffalo sauce
  • 1 tablespoon chili powder
  • 1 can (16 oz) refried beans
  • 1 cup plain Greek yogurt
  • 1 cup salsa
  • 2 cups shredded Mexican cheese mix


  1. Combine all ingredients in small pot.
  2. Cover and cook on low heat for 1 hour, stirring occasionally.
  3. Remove from heat, pour in serving dish, garnish with additional chili powder.
  4. Serve hot and enjoy!

Itz so easy to make!  (Those are always the best recipes.)  And it can be considered lightened up.  I used light cream cheese and Mexican cheese.  (I would not recommend nonfat cream cheese or Mexican cheese.) I used nonfat plain Chobani Greek yogurt, and I suppose low fat or full fat would work just fine, too.  Use more or less chili powder and buffalo sauce depending on your preference of spice.
