Healthy Edible Cookie Dough

Healthy edible cookie dough? That’s my heaven.  I freakin’ love cookie dough.  It was what I missed most when I was pregnant.  Itz only now that I created this recipe though and itz probably a good thing because I would have eaten it all too often during my pregnancy.  And we all know I’m a big believer of moderation and balance.  So is this guy:

Anyway, I was recently sent a Summer Fit Kit from Pure Via through a FitFluential campaign.  Pure Via is a zero calorie, stevia sweetener.  The fit kit’s contents were:

  • Box of Pure Via® non-GMO packets
  • Bottle of Pure Via® stevia liquid
  • Bottle of Pure Via® vanilla stevia liquid
  • Container of instant iced tea
  • Pure Via mason jar & straw
  • Pure Via pedometer

The liquid vanilla stevia is my absolute favorite.  I’m a major vanilla fan and I’ve been adding this to everything.  Most recently, I’ve been adding it to my healthy edible cookie dough and itz the perfect sweet vanilla touch that it needs.  Ready for the recipe?

Healthy Edible Cookie Dough


  • 1 cup almond meal
  • 1 tablespoons brown sugar
  • 4 tablespoons almond milk
  • Pure Via® vanilla stevia liquid
  • tiniest pinch of sea salt
  • optional: toppings such as chocolate chips, sprinkles, etc.


  1. Combine almond meal, sea salt, and brown sugar.
  2. Slowly add almond milk while stirring until desired consistency is reached.
  3. Stir in Pure Via® vanilla stevia liquid. Taste to test. Add more as needed.
  4. Stir in toppings and enjoy!

If you don’t finish the bowl in one sitting, store it in the fridge.  Of course you can add in whatever else you’d like – chocolate chips are Jonny’s preference while white chocolate chips and sprinkles are mine!

Note: It is not recommended to omit or replace the brown sugar as that gives it the true cookie dough flavor.

  4. I’m most looking forward to bicycle riding with my husband! It doesn’t sound like a big deal, but, for me it is: this is the first time in 25 years I’ve ridden a bike; We’ve taken a few “test” rides on our road but a longer ride on a nearby “tracks to trails” trail (used to be an old rail road track) is the plan for the upcoming weekend; and, depending on how it goes, hopefully will become a weekly activity.

  5. Ok I just died this looks so amazing. Can’t wait to try it! I think I might try swapping some of the almond meal for instant oats to lower the fat a bit but still keep things healthy and fiber filled. Yum!

  6. Among hitting the beach and hiking in the gorgeous weather, I’m looking forward to 4th of July weekend… sparklers and fireworks and a giant barbecue with my friends!
