Coconut Flour Pancakes

To the ordinary eye, this may look like any old pancake.

But take a closer (or read this post), and you’ll soon learn that this is not just an ordinary pancake.  Instead, itz a coconut flour pancake that is delicious, nutritious, and wildly easy to make!

Coconut Flour Pancake

~makes 1 large pancake

Ingredients:

  • 1/4 cup each coconut flour, milk, egg whites
  • a few drops vanilla NuNaturals
  • 1/2 teaspoon baking powder

Directions:

  • Combine all ingredients.
  • Cook over medium-low heat, being careful not to burn.
  • Flip pancake to cook the back side.
  • Add your favorite toppings and enjoy!

I added a little maca powder and wheat germ to mine, too, but you don’t have to.  I like to bulk up my pancakes, oatmeal, and smoothies by sneaking in other ingredients.  Chia seeds and flax seeds often make an appearance, as well. 

What’s different about these coconut flour pancakes is that they are thicker and more moist than the traditional pancake.  They’re not light and fluffy; no, no, they are dense and filling and wonderful.  I find that fresh strawberries, unsweetened shredded coconut, and a drizzle of maple syrup are my favorite toppings, though a smear of coconut oil adds a whole other level of richness! Just look at the beauty:

  1. So I know this is bad but I have yet to buy Coconut Flour! I almost bought some last night at the grocery but thought I’d wait. Now you are making me wish I hadn’t! These look amazing :) Especially with the strawberries and shredded coconut! Yum.

  2. my next buy at the grocery store is coconut flour! I finally bought coconut oil this past weekend and used it for the first time yesterday! I was surprised that it didn’t really make my veggies taste any different {like coconuty flavored} because I don’t like coconut!

    • Buy coconut flour from iHerb – itz way cheaper than in stores! And coconut flour is not super coconut-y (like the oil) so I think you’d like it!

  3. Yum yum! I’ve been testing out different coconut flour pancake recipes, so you know these are going on the list. I have been using whole eggs though instead of egg whites, so I’m curious to see which I’ll like better.

    Favorite pancake topping? Sunbutter, no doubt :D

    • Ummm speaking of Sunbutter… My school district just announced that they will start carrying Sunbutter in the cafeterias since there are so many peanut allergies! I don’t have a peanut allergy, but I am beyond excited!!

  4. I keep it classic with just maple syrup. I’m actually not that big of a pancake fan. GASP. Wifey is the pancake eater, so that is mostly why we have them for breakfast. I’m more of an omelet person. Some fresh tomato, spinach… or a ton of meat with cheese and avocado on top. YUMSAUCE!
