Who wants to have some fun? Who wants to talk fitness? Who wants to look at drool-worthy food? Hopefully you because itz WIAW!
Let’s start with food. Breakfast was a cold bowl of goodness. It involved many of my favorites: Chobani Chompions Verry Berry greek yogurt, Trader Joe’s High Fiber Fruit & Nut Medley, Barlean’s Blueberry Pomegranate Omega Swirl, and a couple dollops of PB Crave’s Razzle Dazzle peanut butter. It was like a peanut butter and jelly bowl only better and more nutritious. (Still time to enter the PB Crave giveaway!)
Lunch was obviously leftover rainbow salad.
Just as good on day number 2! My protein fix before, during, and after lunch was several bites of turkey with the spiced (healthy) hollandaise.
So spicy, and so, so good. Dinner was a hodge-podge as my family went to an outdoor concert last night. There was some Beatles rendition band playing, so we packed a picnic, set up chairs, and hung out. I brought celery and carrots to eat with a creamy avocado yogurt dip I made. The dip was very creamy and packed with protein (thank you, greek yogurt!).
My mom made simple turkey sandwiches with turkey, a slice of swiss, and a piece of lettuce on whole wheat buns.
I also made macaroons that are just incredibly easy, moist, and tasty! I started with Katie’s Four-Minute Coconut Macaroon recipe, but adapted it with the ingredients I had on hand.
Easy Macaroons
~makes about 20 small cookies
Ingredients:
- 2 cups shredded coconut
- 1 cup plain yogurt
- 1 dropper full NuNaturals Vanilla Stevia
- 4 tablespoons agave nectar
- 3 tablespoons whole wheat flour
- 2 tablespoons wheat germ (optional)
Directions:
- Mix all ingredients in a bowl.
- Microwave for 3 minutes.
- Scoop mixture onto greased baking sheet.
- Bake at 350 for 20 minutes.
The yogurt makes them so moist. Nom, nom! Now let’s talk fitness. On Monday, I met a friend at the gym and we completed this back workout before running one mile and doing 20 minutes on the elliptical. Yesterday’s workout was a short two mile run. Nothing fancy, just wanted to get my sweat on and my legs moving. Mission accomplished and streak continued.
Today, well we’ll see what today brings. I have nothing in mind, but I know I’ll get to the gym at some point. Oh the joys of having my days off during the summer… I can do what I want, when I want, and for how long I want. Yippee!
