Happy Wednesday!  Another great day of summer continues, made all the better with a new What I Ate Wednesday.  I’m still totally stoked about getting my ticket to Healthy Living Summit this summer.  Are you going?  You can still register here.  Alright, now let’s talk food – the reason for this post.

Thanks to Jenn at Peas and Crayons for organizing this delectable day.  I’ve really been loving using all my Barlean’s Omega Swirls.  There are so fun ways to use them, but I made a killer bowl of oatmeal the other day using the Strawberry Banana Omega Swirl.

I prepared my oats on the stove and then added bananas and strawberry slices before drizzling the swirl on top.  Yum!  Don’t forget, you have two days left to enter the giveaway to win a bottle in the Key Lime flavor ($25 value!).

Lunch lately has included lots of peppers and lots of avocados.  (I love summertime Farmer’s Markets!)  I toasted two pieces of Ezekiel bread; one slice had slivers of brie cheese made from goat’s milk.  Avocado slices were on the other and pepper slices were in the middle.

It was warm, gooey, and delicious.  Most nights, dinner has been coming together rather quickly since I’ve been enjoying the beautiful weather outdoors.  However, I have been making sure to include lots of colors!

Brown rice, pinto beans, veggies, and tofu.  All food groups, all colors, all good.  I combined a ton of different vegetables on the stove and used Trader Joe’s sweet chili sauce (SO good!).  I baked the tofu (plain) in the oven at 375 for about 30 minutes or so.  The nuggets get crispy on the outside and are perfect for dipping.  (And they are Jonny approved – which is huge considering they didn’t come from an animal!)

The other night after dinner, my sweet tooth was totally kicking.  Mama Pea recently posted a recipe for Hot Apple Pie Smoothies, so I made just that.

AMAZING!  You can’t really tell from the picture, but on top is warm streusel topping.  I tried to take the picture quickly, but it obviously didn’t work very well.  Once the smoothie was finished, all that was left was the streusel topping.  It was like the smoothie kept getting better and better.  This will definitely be making an appearance again and I would recommend you try it, too.

    I swear if I don’t get that fish oil I am going to buy myself some 😉 That Key Lime just sounds too good to pass up!

    • Oh my gosh it’s so easy!!! I am way more comfortable preparing tofu than meat…. You can’t mess it up or under/over-cook it!! And it takes on whatever flavor you cook it with!! Do it!

  2. Healthy dessert? Haha. J/k I usually make flourless chocolate chip cookies quite often for my hubby which are actually quite healthy. You totally can’t tell and they are super delicious. Your dinner looks so eye catching and makes me want it bad!!
