I’m not going to lie… I needed to look up the word “gumption” before I knew how to reply to Jeff. I was pleased to read Dictionary.com’s definition.
Courage. Spunk. Guts. I like it. Thanks, Jeff. After my vocabulary lesson for the day, I began my weekly meal prep. There was a bag of chickpeas that had been sitting in my pantry for awhile just begging to get used. Luckily, Annette recently posted a couple of recipes for Roasted Chickpea Snacks.
AMAZING! Garlic Lime and Cocoa Cinnamon. Jonny and I could not stop eating them. They were super easy, too. I foresee many more batches of roasted chickpeas in my near future. I can’t wait to experiment with different flavors as there is just so much you could do here. The sweet and salty combos that Annette suggested were killer and I think these would be great to make for a get together.
After the chickpeas were done, I threw a bag of navy beans into my crockpot with a spoonful of minced garlic and let it cook on low for 3 hours.
My weekly bean supply is done. Then I put some zucchini and squash in the oven while carrots, green peppers, onion, and corn were on the stove. I let the veggies cook in the same orange ginger sauce I used last week and pretty soon my prepared veggie supply was finished for the week.
Batch cooking makes life during the week so much easier! I decided to take it easy on the workout front yesterday since I ran the 5K the day before. I wasn’t sore, but I went out on Saturday night, got home late, and, frankly, just didn’t feel like going to the gym. Jonny and I took Zoey on a stroll through the neighborhood, plus I walked to and from my in-laws’ house for a hot session in the sun. I think I walked about 2 miles total, and for a lazy Sunday, I was fine with it.
This morning, though, I was in the mood for a total body workout. I ended up completing this workout I found on One Fit Foodie’s blog. It was three different circuits completed three times each. I liked that there were short bursts of cardio in between. Definitely kept my heartrate up!
