I sure have been in the baking mood lately and itz a good thing because Bob’s Red Mill sent me three of their products to review.
Oh, the beauty of their bags! The flaxseed meal is something that I use all.the.time. I literally put a tablespoon or two in just about everything I make. Oatmeal. Protein shakes. Blended coffee drinks. Cookies. Pancakes. Snack bars. Even tofu nuggets! I put flaxseed in everything because of the high fiber and omega-3 fatty acids. Ground flaxseed is easier for the body to digest than whole flaxseeds. Many benefits without even tasting it. A spoonful here and a spoonful there and a spoonful everywhere.
The Date Nut Bran Muffin Mix really impressed me. I don’t usually make pre-made mixes, but the fact that each muffin packed 2 grams of fiber and 2 grams of sugar was definitely appealing. The bag suggested adding a banana or applesauce to make them extra-moist, and I don’t like dry muffins, so I did add one banana. I didn’t mash it very well, but ended up loving the banana bits inside. Plus, there are so many ways to top these tasty muffins!
- Top 3: Coconut butter with shredded coconut
- Middle 3: Peanut butter with cinnamon
- Bottom 3: Cake batter protein frosting with sprinkles
And they just look pretty, don’t you think? I had fun coming up with the combinations and I can’t wait to make more and vary the toppings a bit. Next time I will probably add applesauce to the mix and see how those turn out. I couldn’t even decide which one to try first so I mixed and matched.
Best of both worlds! My in-laws and Jonny gave rave reviews about these muffins and even suggested I make them for our Mother’s Day brunch. I don’t think I’m going to bring bran muffins though… as good as they were!
My third and final product to try was the Gluten Free Chocolate Chip Cookie Mix. I don’t keep a gluten-free diet or anything close to it, but I liked the idea of having a cookie mix on hand to easily whip up a batch. Per reviews on the website, I added some vanilla (specifically, NuNaturals Vanilla Extract - 2 droppers full). HOLY YUMNESS!
24 perfectly round, soft chewy cookies. They were thick and substantial and delicious. I don’t like flat, teeny tiny cookies – and these weren’t! At all! They were unbelievable.
You gluten-free folks have got to check these out. Scratch that. Everyone needs to get a bag and make these ASAP. They were that good and you will probably be shocked that they came from a bagged mix. Jonny asked if there was a limit to how many he could eat in one night. I told him yes just so there would be more for me.
